For food to be nutritious, it must not be contaminated - that's a given. However, food poisoning strikes millions of people every year. Too bad, since you can keep your edibles safe by following six simple rules:
• Keep food very hot or very cold. Bacteria multiply most rapidly when food is at room temperature (between 40 and 140 degrees Fahrenheit). Refrigerate foods to be stored at once instead of setting it out on the kitchen counter to cool. Slow cooling is the perfect environment for bacterial growth.
• Since raw meat can be contaminated with salmonella and Campylobacter, cook all meats, seafood and poultry thoroughly. Don't taste while cooking. One undercooked contaminated bite can make you sick.
• Wash hands before handling food. Wash all food thoroughly (including packaged meats) before cooking or serving.
• Scrub utensils, cutting boards and cooking equipment thoroughly before storage and rinse before re-using.
• Discard dated foods. Check ‘use before' dates on all packaged and canned foods.
• If power fails, or your refrigerator or freezer begins acting up, do not open doors unnecessarily. Do not keep thawed frozen food for more than two days. Do not refreeze thawed frozen foods.
